Dark Chocolate Oatmeal Pancakes with Strawberry Syrup

First things first I have shared a strawberry syrup recipe before but this one is for the adults (if you know what I mean. It has alcohol is what I mean. But if you are making these for the young ins then just use the recipe in the strawberry pancake post. You might want to check that post here. If you didn’t see it before.

Ok let’s proceed to these gorgeous tasty Chocolate OATMEAL pancakes that just so happen to be healthy, I mean the ingredient list contains good stuff. Oats, almond milk, dark chocolate, wine (yes that too). LOL

And they get so fluffy, because of the baking powder and I presume almond milk, every time I use almond milk in pancakes they get fluffy (to be further investigated) . The recipe calls for 1 cup milk, but keep a little more close by because you might want to adjust consistency.

I have tried to give a vegan substitute for the egg, because I really want everyone to try this. It’s so good! I have made these pancakes with a blended banana in place of the egg and they turn out perfect, even sweeter.

The sugar/honey amount depends on how much of a sweet  tooth you are. My advice to you 1 tablespoon, no? ok carry on don’t let me kill your vibe.

Ingredients

  • 200 gms oat flour
  • 50 gms dark unsweetened cocoa powder
  • 40 gms (honey/sugar)
  • 1 teaspoon baking powder
  • 1 egg / 1 blended banana
  • ¼ teaspoon nutmeg grated
  • ¼ teaspoon cinnamon powder
  • 1 teaspoon vanilla essence
  • 1 cup almond milk (you might need a little more)
  • For the strawberry syrup;
  • 1 cup white wine
  • 1/2 cup sugar
  • 2 cups quartered strawberries

Method

  1. Mix together the oat flour, nutmeg, baking powder, cinnamon powder together and mix in all he other ingredients. Grease your pan / if you have cooking spray . Pour your batter ¼ cup at atime . Cook one side until you start to see bubbles, and flip. These pancakes cook faster than ordinary Pancakes, so 1-2 minutes per side.
  2. For the strawberry syrup;Combine all ingredients in a saucepan, and over medium let it simmer until the wine evaporates and sauce gets very thick and caramelized. Crush the strawberries as it simmers and keep testing with the back of a spoon, when it starts to stick to the spoon it’s ready.
